I was wondering if anyone had knowledge of how easy/difficult/impossible it is to get a job that pays under the counter in Europe (specifically London, France, or Italy)... ie working at a hostel, waitressing, bartending, etc... ??

welcome first of all...it is very possible, especially helps if you know the local language. Also be willing to be paid accomidation, food, etc.

I've also seen hostels mentioning they will offer free accomodation for about 5 hours worth of work around the hostel. I'd imagine it'd be mostly cleaning and the like, but then you'd have a free place to stay! And probably meet up with the locals.

That is a great question. I'd like to spend some time over seas eventually, and have pondered this same question.
