I am planning a tour from Aosta to Sicily to different
cheese makers and farms. I am looking for work
and lodging. I am a chef and can wait tables. Any

could be difficult if you are not a citizen of any European country. I assume that you will be working under the table. In this case, one suggestion is to review the travelpunk.com/work page for ideas. The other suggestion is that in Italy if you work for free you donīt have to have a work visa/permit or anything else. Because you are working for free you are doing nothing illegal. Now I donīt really mean free, what I mean is find something that pays you in tips.Companies that offer Free tours to the popular sites in Italy can reap big tips from vacationers around the world. Or you can bargain with a hostel manager to work in exchange for free housing.
You will have to rely on your creativity. Good luck.
