I answered a bunch of your questions about staying in Dubrovnik in this post: http://www.travelpunk.com/boards/showthread.php?t=14323

So yeah, in Dub just show up. Other places you might wanna book ahead of time since its the high season in a lot of places.

Getting hostels for Italy especially would be smart if you can, Slovenia and Croatia shouldn't be a problem. Since you're traveling in a big group, that makes it a little harder for hostels to accommodate you. I didn't have much trouble since I was mostly traveling alone, but the more people with you, the more difficult it can be. I'm sure you'll do fine. Good luck and have fun!

The best hostel site out there is www.hostelz.com they feature user written hostel reviews. (I was a hostel reviewer for them a month ago), it might give u a good idea what hostel is good, what is not.

As for booking vs. not-booking... when I enter a city, I like to have a destination, or at least a list of hostels to check out. Otherwise you're tired, carryign your pack around, and have to look for places from scratch... which totally blows. In my opinion, booking is the way to go.

That being said, book a few days in advance when you KNOW what you'll be doing for sure. Unless you're on a strict schedule, which then even far ahead booking is good.
