What would you say is an average checkout time for most hostels. If you are moving on to another city that day and you train doesnt leave for a while and you are checked out is there a place to store your shit??

well i dont know about storing your shit but most will store your luggage for you ;)
most hostels check out at 10am but if you get a lucky one its midday. there has always been somewhere to store my luggage at all the hostels i have been to |

And if not, the train stations often have lockers, so you can get to the station, store your stuff, walk around town a while, and catch your onward train. |
All the hostels I stayed at on my South-Eastern Europe trip were really good about leaving my luggage there, and most didn't even mind me chilling in the lounge area until my train/bus left which was usually in the evening, sometimes as late as 10/11PM at night.

How big are the lockers at the train stations? Would someones entire backpacking stuff fit into one or two lockers? I picture them as being tiny little lockers. How much do the lockers range in price?

There are usually very large lockers available. Eva and I stuffed BOTH of our packs into one of the big ones. I think it was about 5 euros and it was good for a few hours. Prices vary. I used lockers in Valencia, Barcelona, Nice, Paris and Munich. :)
