Depends where you are going. $500 will get you far in Eastern Europe but it will last a few days in London.

If you buy yourself a little MSR campstove and just eat ramen noodles with the occasional hotdog you can go for months without spending hardly anything.
You will also waste away to nothing but that doesn't matter much when you are seeing the country.
