Ireland is part of the Eurail system but no, you can't go through Britain. Two separate islands.
There should be a ferry from the mainland to Ireland. Or you can take a cheap flight. Buses are more popular in Ireland than trains, so you can go to more destinations.
Itineraries aren't at all required. We went last somewhere and knew loosely our first three destinations but that was because we had to land in one, visit family in another, and visit another place with my brother. The rest we winged. Much more fun but can be a hassle not having stuff prebooked.
