I've seen pics of Athens with a little frosting of snow, but it's not common. Are you looking to ski, or trying to avoid packing cold weather gear? Because if it's the latter, you'll still probably need a halfway decent coat and/or a warm sweater. Being near the water, it may not be frigid, but that damp cold can really chill you. We were in Greece last Easter, and really were grateful for our trousers and jackets (and we were escaping winter in northern Europe at the time) on the overcast, windy days.

Another trick in Greece, in the off season a lot of the smaller pensions and private rooms were not available, we had a bit of trouble finding digs for our family. And some transportation is more limited then, too. Just be sure that the places you want to stay and transport you want really is operating during the off-season.
