If you can nap for an hour on a plane, then you shouldn't have a problem on the train. In fact, it's probably easier. You don't have to worry about seatbelts, there's usually more leg room, and you most likely won't be packed in as tightly with your neighbors..
In terms of A'dam being an all night city - it can be, depending on what you're looking for. Most bars and coffeeshops will be closed by 2oo, but there are a number of clubs that go all night, depending on the night of the week. If you're a real trooper, you can walk all over the city in the middle of the night - and other than some parts of the Red Light District, it's pretty safe and eerily quiet and beautiful.. but man, I'd be dead tired.
The question at this point is - where are you going to stow all your stuff until you check into the hostel in the morning? I think they have lockers at Centraal Station, but I can't answer that with authority...

I am gonna stay at the Sleep Well hostel in Brusells when I am there on my trip (I will be in Europe from May 29 to June 12). It was roughly $20 usd per night. I booked it online with http://www.hostelworld.com . You could always crash there and have a couple Belgian beers before hitting A-dam. I checked my schedules and it appears that trains leave hourly from A-dam to Brussels which to me translate to the same leaving from Brussels to A-dam every hour. You could leave in the morning and have a nice night's rest before hitting A-dam and drinking your nuts off
Whatever you decide, happy trails!
