Just about anywhere in Spain during that time of year will be pretty festive.

Barcelona, Seville, San Sebastian, Valencia, Toledo, Segovia, Malaga, Marbella, Alicante, Salamanca, Granada, the list goes on...

Toledo and Segovia are about 30-45 minutes from Madrid so you can knock those out pretty quickly.

You better budget money for Ibiza because it's expensive.

1 week doesn't give you much time to get around.

I'd recommend sticking to one or two places for this trip. You could easily spend a week in Barcelona. I liked Valencia as well but there are lots of great cities in Spain.

I personally fond Madrid to be extremely boring.

I agree with everyone else, if you have a week, limit yourself to one or two cities. Otherwise you'll be spending almost all your time traveling.

Barcelona - Tons of fun stuff to do. Lots of places to party, awesome architecture, the beach, etc. Walking up and down las ramblas is a lot of fun too.

Sevilla - There is a lot of stuff crammed into this city! It's on the smaller side, but you can easily find a lot of fun stuff to do.

Madrid - I didn't spend enough time here to really give you a run down. The advantage is that you're close to some cool daytrips like Tony mentioned.
