The weekends where you are suck for service. Saturday is bad, but Sunday is a ghost town. Florence is gonna be different, but the smaller stops are virtually empty.
I always went to the terminal and read what services are available the next day and show up early, like you said. I was using a europass and so buying tickets were moot. However, I am sure that as soon as you hop on the train you could hunt down an employee and purchase a ticket.

I only caught a slow train once, the rest was eurostar.
If I remember correctly, you have to validate your ticket before getting on the train otherwise theyre not very nice to you. I caught a train on a Sunday and it was fine, I just used the self help ticket thing - haha, sorry thats not very helpful!

You can buy tickets at the ticket machines at the stations right before the trains take off. Remember to stick em in the yellow validation box before you get on! I think non-reservation trains like the IC trains that don't have specific seats can be used at any time on the route, you just have to validate them before you get on.
Also, look for the amica fares under the specials or promotions, you can get a 20% off on some routes!

I had a hard time finding a validation box that worked at times. I would just write the time of day and date on the ticket. Fortunately I was never "caught" so I don't know how that would have played...
