I havn't stayed in a hostel in TO or Vancouver before, but I can reccomend a few elsewhere.
In Victoria, the Ocean Island Backpackers Inn is a large and very fun hostel. I've stayed there four times. It's right in the heart of the Victoria harbour and walking distance to all of the sites.
In Montreal, I've stayed at the HI and the Auberge Chez Jean. The HI is very large and the rooms feel like a hotel room. They're very lax except they don't allow outside alcohol (not like you can't sneak it in) and charge a surprisingly large amount for beer in their cafe. Auberge Chez Jean is a really interesting hostel. It consists of three floors in an old Montreal rowhouse near the north end of St. Laurant street. There's no actual rooms, just a bunch of beds everywhere. They have a great courtyeard in the back with a VW bus you can sleep in durring the summer. Showers are outside. It sounds awful, but I had such a great time there.
In Quebec City, I stayed at the Auberge de la Paix. It is a medium sized hostel inside the old upper city wall. They have a great courtyard, large kitchen, free toast/cereal/coffee in the morning, smoking room. I highly reccomend it.
