We're in our late twenties...NOT old, but not realy looking for a crazy trip either. We both lived in Germany 8 years ago and loved the castles, museums, and of course the pubs , but want to spread our wings a bit. Really want to hit Amsterdam, but not real sure what other places have to offer without a MASSIVE search....scenery, history and culture being the most important. We are looking at about a 2-weeker. Do you reccommend a hotel reservation every 3-4 nights to get a good night sleep or can a couple get a little peace in hostels. Plenty of time, just wanted to get some ideas.

Hi - you could definitely do a 2-weeker just in Amsterdam, or you could split it b/w two countries, but it would be a bit tight. France and Italy will definitely offer you what you're looking for. I hear Czech Republic is awesome too. Depending on your budget, you may want to stick to a hotel if you want to spend a more comfortable time as a couple, although most hostels offer single rooms. If you are going on non-peak time, you can make your first reservation for when you arrive and then decide as you go along. Otherwise, definitely book your entire stay.
